My mom once told me that, because of my Spina Bifida, the doctors told her that I would never walk. Then once I began walking, they told her that if I became overweight as an adult that I would become wheelchair bound. As an adult, I was always fairly fit even without the benefit of what little exercise I could do due to my physical constraints. But once I got married, I slowly started to gain more and more weight. I got the "happy fat".

Kale Chips

Did you know that Kale is a great food full of vitamins (even calcium!).  It tends to have a bit of a bitter taste if you don't cook and season it just right (or hide it in a smoothie!), but these chips don't taste bitter at all! My kids love them and eat an entire batch in one sitting! If you are on P2 then make these without the oil and cheese!  Sprinkle with a bit of Celtic sea salt and any other approved seasonings!

Grace and Strength saves Disney!

Last year, I started Grace & Strength, finished it and then became a coach! Since then, I've started running and have a pretty consistent exercise routine. I totally love my life but never saw how a trip to Disney World would put such a perspective on my "new" way of life. Early February, my hubby and I decided to treat ourselves and our 2 kids to a family vacation to Disney World.
