Ingredients
- 4 thin whole slices of onion
- 4 thick cut tomato slices
- 1-2 garlic cloves sliced
- 2 fresh basil leaves, rolled and sliced
- Sprinkle of oregano
- Salt and pepper to taste
- Squeeze of lemon juice
Directions:
- Lay out slices of onion rings on a baking sheet.
- Sprinkle with salt, pepper and lemon juice.
- Lay a few slices of basil and garlic on top of each onion slice.
- Top each onion slice with a slice of tomato.
- Sprinkle the remaining basil and garlic on the tomato slices.
- Bake at 375 degrees for 10-15 minutes or until desired level of doneness.
Makes 4 servings. (1 vegetable each serving)
