It's sometimes hard to find a sweet dessert that is "clean" and good for you. This coconut smoothie/sorbet is a favorite in our house and it hits the spot every time. Coconut milk and coconut sugar are both beneficial to your health (click here to read more on coconut sugar), just make sure there aren't any added ingredients in the brand that you buy. I labeled this a smoothie, but if you add more ice or frozen fruit then it will become a delicious sorbet! This recipe is great for Phase 4 and beyond!
Ingredients
- 1 Can full fat, canned coconut milk
- 3-4 cups fresh or frozen fruit
- 1/4 cup coconut sugar (you can start with a little less and add more if needed)
- 4-6 ice cubes
Directions
- Place the can of coconut milk in refrigerator overnight. This will give you a nice, thick milk to work with. When you are ready to make your smoothie, combine the thick part of of the coconut milk in the blender. You can add the entire can if you are going for a smoothie-like consistency.
- Add fruit, coconut sugar, and ice cubes.
- Blend to desired consistency. Frozen fruit and/or extra ice cubes will give you a more sorbet-like consistency.
