Isn't this salad beautiful? One of my Phase 2 ladies posted this on Facebook and I immediately asked if I could share the recipe!

Ingredients:
3.5 ounces fresh spinach, rinsed
6 organic strawberries, sliced
1/2 cup fat-free cottage cheese
Dressing:
- 1/2-1 teaspoon Braggs Aminos (an organic soy sauce)
- 1/2-1 teaspoon apple cider vinegar
- 1 tablespoon yellow mustard
- 1 tablespoon spicy mustard
- Stevia drops to taste
Directions:
- Top spinach with strawberries and cottage cheese.
- In a separate bowl, mix the mustards, vinegar, and aminos (add more aminos and vinegar if desired).
- Start with 2 stevia drops and add more if you like. You'll have to play with the amounts and get it just right for you!
This will count as one meal and one fruit on P2. A great P3 addition would be unsalted nuts!
