I love a good, fresh cucumber! I also love cucumber salad, and this recipe is a perfect fit for Phase 2!
Cucumber Salad
- 3.5 ounces fresh cucumbers, sliced or diced (however you prefer)
- 1 Tablespoon Vinegar
- 1 Tablespoon Dill Weed (fresh is best, but dried is fine)
- Dash of Stevia, salt, and pepper
To make this salad, slice or cube the cucumbers and place in a bowl. Set aside, and in another bowl combine the remaining ingredients and stir well. Pour over cucumbers and refrigerate until ready to serve.
This counts as your vegetable serving while on Phase 2.
