It doesn't sound very appealing (especially if you aren't a fan of cottage cheese) but it was SO good--I wanted to lick the bowl!! You could substitute a different veggie for the asparagus. This recipe is phase 2 approved!
Creamy Asparagus Soup
- Place 3.5 ounces raw asparagus in a sauce pan and add enough water to cover well.
- Sprinkle onion powder and Mrs. Dash or other seasoning on asparagus.
- Boil until asparagus is tender.
- Allow pot with asparagus and water to cool slightly.
- Place 1/2 cup of fat-free cottage cheese in blender.
- Add a clove of fresh minced garlic
- Pour asparagus and water from sauce pan into blender.
- Blend until desired consistency.
- Top with salt and pepper.
Enjoy with a grissini bread stick or melba toast!
