Whether it is Thanksgiving or any major holiday, I know that baked goods are going to be a big temptation for some.
That's why I spent last night creating this Grace and Strength Phase 2 approved pumpkin pie recipe!
Ingredients
- 1/2 cup nonfat cottage cheese
- 1 egg white
- 1 teaspoon stevia
- 1/2 - 1 teaspoon pumpkin pie spice
Directions
- Preheat oven to 350°.
- Mix all ingredients in a small bowl. You can also blend in the blender, but if you do this add an extra teaspoon of cottage cheese because you will lose quite a bit of it on the sides.
- Pour into a 2 cup oven-safe dish and bake for one hour.
Eat warm or refrigerate and enjoy cold!
For a Phase 3 variation, add 1/4 cup of pumpkin. Note that on Phase 2 this counts as one protein.
