You Mean You Can Eat More Than Just Rabbit Food??
Confession: I am probably the pickiest person on the face of the earth. No really ... it's 99.9% most likely to be a true statement (just ask my fellow G&Ser comrads) (I can all see them nodding their heads up and down right at this moment)
Bonus: Unlike most diets, the list of Grace and Strength Lifestyle protocol foods is quite lengthy in my opinion.
Ugh: Yet I still only managed to discover that I liked three of the approved food items on the list. Wahoo, Go Lindsay!
Soooooo .... what did I do?? I ate those three foods for 6 1/2 months lol. But I did it, and I didn't cheat even one time!
Secret: Towards the end of my program I started to try new things .... WHAT!?! SHOCKER! So I wanted to share with you one of my favorites that I ACTUALLY DID TRY *and liked*! And to show even the pickiest of you out there that you can still succeed on the Grace & Strength Lifestyle no matter how picky you are!
Recipe: Mexican Chicken
Ingredients:
- 1 clove minced garlic
- 1 cup diced tomatoes
- 4 cups homemade or organic chicken broth
- 4 tsp cumin
- 2 tsp onion powder
- 2 tsp chili powder
- 2 tsp cayenne (may omit)
- 1 lb. cooked chicken, shredded into bite-sized pieces
- 1/4 cup fresh chopped Cilantro (optional)
Directions:
- Pre-heat pot over medium-high heat.
- Add garlic, and cook for 3-5 minutes. (Heat until you see little bubbles around the garlic.) Use a bit of your broth to keep garlic from sticking to the pot, if necessary.
- Add tomatoes, chicken broth, and onion powder, cumin, chili powder, and cayenne.
- Bring to a boil.
- Reduce heat to a simmer, and add chicken.
- Simmer for 20 minutes.
- Stir in cilantro, and simmer for 5 minutes more.
Serves 4
