You don't have to get fancy and complex to enjoy a good meal while on Phase 2! This is one of my favorite basic recipes that I still enjoy 2-3 times a week!
Sauteed Chicken and Spinach
Ingredients
- 3 oz thin sliced chicken breasts or tenderloins
- 3.5 oz fresh spinach
- Celtic Sea Salt
- Garlic Powder
Directions
- Dice chicken and cook over medium heat until cooked through.
- In a separate pan, combine your fresh spinach with 2-3 tablespoons of water. Cook over low heat, stirring occasionally, until leaves are soft. You can add a bit of salt and garlic powder to either your chicken or spinach while cooking, but this isn't necessary (it will just add a bit more flavor).
- Once the spinach is cooked, add it to your plate then top with cooked chicken.
- Sprinkle with sea salt and garlic powder, or any other seasoning of your choice!
If you're on Phase 3 or Phase 4, drizzle with a little Organic Olive Oil before adding seasonings and top with a little shredded cheese!
