I am not a fan of tomatoes...never have been. I do, however, love tomato soup!
This is a great option for Phase 2 and is so delicious!!
Tomato Soup
Ingredients
- 3.5 ounces of fresh tomatoes, diced
- 2 cups low sodium chicken broth
- dash of basil, oregano, garlic powder, onion powder, powdered stevia
- salt and pepper to taste
- 1 tablespoon milk
Directions
Combine everything but the milk in a pot and cook on medium heat until the tomato is nice and soft (about 20-25 minutes).
Add the soup and the milk to a blender and blend until it reaches desired consistency.
