I had never tried spaghetti squash until I reached Phase 3 with Grace and Strength.
I can't believe what I was missing--it is so versatile and seriously delicious! The recipe below has quickly become a family favorite--when you try it let me know what you think!
Italian Style Spaghetti Squash
Ingredients
- 1 medium spaghetti squash, cooked (great instructions here)
- 1/2 cup organic ricotta cheese
- 1/2 cup organic mozzarella cheese, shredded
- 1/3-1/2 organic diced tomatoes, seasoned with garlic, basil, oregano
- salt and pepper to taste
Directions
- In a small bowl, combine ricotta and mozzarella cheeses.
- Place these over top of shredded spaghetti squash, then cover with tomatoes.
- Add salt and pepper to taste.
- Place in microwave for 40-60 seconds to heat cheese and tomatoes.
- Enjoy!
